Will the field values still be visible?
Yes — whatever was typed into the fields stays visible on the page, it just can't be edited or interacted with anymore.
Will the flattened PDF's text still be selectable?
No — since pages are rebuilt as images, the whole document loses text selection and search, the same trade-off as the Redact PDF tool.
